Beery ANZAC Biscuits

Ingredients

  • 50mL 8Bit IPA
  • 1 cup all-purpose flour 
  • 1 cup rolled oats
  • 3/4 cup desiccated coconut
  • 3/4 cup brown sugar
  • 1/2 cup unsalted butter
  • 2 tbsp golden syrup 
  • 1 tsp baking soda

Method

    1. Preheat oven to 180°C and grease 2-3 large baking trays
    2. Melt butter in a saucepan over medium heat, add maple syrup and 8Bit IPA. Stir well. 
    3. In a large bowl, mix together all of the dry ingredients; flour, rolled oats, coconut and sugar. 
    4. Add the melted butter/beer combo to the dry mixture and stir all ingredients until combined. 
    5. Spoon some of the mixture and roll into a ball. Place balls of mixture on the tray, flatten slightly and leave a 2-3cm gap between each ball. 
    6. Bake at 180°C for 10-15 minutes or until golden brown. 
    7. Remove biscuits from oven and serve warm with a cold bottle of 8Bit IPA.
