Beer Brined Chicken Wings


  • 1 bottle of Chop Shop Pale Ale
  • 1kg chicken wings 
  • 1/2 cup Franks Original Hot Sauce 
  • 1/2 cup unsalted butter 
  • 1/4 cup Worcestershire sauce
  • 1 1/2 tbsp white vinegar 
  • 1 tbsp salt
  • 1/4 tsp cayenne pepper
  • 1/8 tsp garlic powder 
  • 1 tsp brown sugar
  •  Peanut oil for frying


  1. In a large bowl, mix together salt, brown sugar, and Chop Shop Pale Ale 
  2. Add chicken wings and refrigerate for 30 minutes 
  3. Combine hot sauce, butter, vinegar, Worcestershire sauce, cayenne pepper and garlic powder in a pot over medium heat. Bring to a simmer while stirring. 
  4. As the liquid begins to bubble, remove from heat and set aside. 
  5. Remove wings from the fridge and pat dry with paper towel. 
  6. In a separate pot, heat the peanut oil to 180°C and fry chicken wings for 10 minutes. 
  7. In a large bowl, combine chicken wings and sauce. Mix until the wings are coated evenly. 
  8. Place wings on a serving plate, top with chopped shallots and serve with a bottle of Chop Shop Pale Ale.
