Odin's Raven Juniper Witbier (April, 2017) CITRUS - PINE - HERBAL - HONEY

This collaboration with Viking-themed bar Mjølner recreates a traditional Norse brew that could quench the thirst of Odin himself.

Odin’s Raven offers a slightly sweet, honey-like flavour coupled with the distinct citrus notes of the orange peel. The tart juniper berries add a sharp, resinous, piney flavour, while the coriander seeds lift the complexity ever so subtly. It is sensory heaven redux with multiple fruity aromas and herbal flavours.

Essentially a classic Belgian Wit, including orange peel and coriander, but we’ve added juniper – an ancient element found in a traditional Norwegian beer known as Sahti. While Sahti uses juniper stalks instead of hops, we’ve chosen to use the berry as an addition to enhance the profile.

HOPS: Magnum

MALT: Pilsen, Rolled Wheat, Rolled Oats

YEAST:  Belgian Wit Bier

SPECIAL INGREDIENTS: 7kg of Juniper Berries + 5kg of Orange Peel

IBU: 12

ABV: 4.6%

Pair this brew with the best game meat and cheeses a Norse God would be deserving of: suckling pig, lamb racks and pork knuckles. Freshly caught trout or smoked salmon with dill would also do this beer justice.
